Butter Clams over Fregola Sarda with Lemon Zest and Dill

An easy one pot weeknight dinner with very little prep and very little clean up.

Butter Clams over Fregola Sarda with Lemon Zest and Dill

Yield: 2 Servings
Time: Approximately 20 minutes

Ingredients:
1 package fregola sarda
2 # butter clams
2 cloves garlic, smashed
1 bunch fresh dill
1 lemon, juiced and zested
olive oil
salt & pepper to taste

Preparation:
Rinse butter clams thoroughly.

Cook fregola sarda in salted boiling water according to package instructions. Drain, rinse, drizzle with olive oil and set aside.

Heat 1 T olive oil and 2 smashed garlic cloves in the same pot over medium-high. Add butter clams and lemon juice. Cook just long enough for the clams to pop open.

Reduce heat to low. Stir in fregola sarda, lemon zest, dill fronds, salt and pepper.

Plate and enjoy!
