Hot Crab Dip

Hot Crab Dip

Yield: 6 Servings
Time: Approximately 30 minutes

Ingredients:
Unsalted Butter for Greasing the Baking Dish
1# All Leg Crab Meat, Drained and Picked Over
8 Ounces Cream Cheese, Softened
1 Cup Parmesan, Grated
1 t Kosher Salt
1/4 Cup Mayonnaise
1 t Lemon Zest plus 4 T Lemon Juice
2 Scallions, Minced, plus more for garnish
1 1/2 T Old Bay Seasoning, plus more for serving
1/2 Cup Crushed Ritz Crackers, plus more for serving
1 English Cucumber, Sliced
1 Bunch Radishes, Sliced

Preparation:
Preheat oven to 375 degrees and grease a shallow 4 cup capacity baking dish or ovenproof skillet with butter.

In a medium bowl, combine crab meat, cream cheese, 1/2 cup Parmesan, salt, mayonnaise, lemon zest, lemon juice, scallion, and Old Bay. Mix with a fork until thoroughly combined then scrape the mixture into your prepared baking dish, smoothing the top.

In a small bowl, combine Ritz crackers and remaining 1/2 cup Parmesan.

Sprinkle evenly over dip and bake for 25 minutes, or until bubbling and golden brown on top.

Dust lightly with Old Bay, sprinkle with a few minced scallions, and serve hot with sliced radish, cucumber, and crackers.
